This 15 Minute Black Bean chili is rich in flavors and made only with pantry ingredients you already have on home. This smokey recipe is quick and easy and you can enjoy this with rice, nachos, on tortilla wraps or as is. It is rich in proteins and this is what makes this chili great when meal prepping.

Cooking time: 15 minutes
Ingredients
- 1 medium onion, diced
- 3-4 garlic cloves, peeled and minced
- 1 (400 gr) can diced tomatoes
- 1 (400 gr) can black beans, drained and washed
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- 1 tbsp maple syrup (or date syrup)
- 1 tsp smoked paprika
- 1 tsp ground coriander
- 1/2 tsp ground cumin
- 1 tsp chili powder
- salt and pepper
- handful of fresh parsley, chopped
- juice of half a lime (optional)
Preparation
- Heat the olive oil on a large pan over medium heat. Once warm, add the onion, garlic and a pinch of salt and let it cook until the onion is soft. It will take 5 minutes.
- When the onion has become soft, add the spices and black beans and give it a stir. Then add the tomatoes, maple syrup, apple cider vinegar, salt and pepper. Let it cook for about 10 minutes.
- Once cooked, add the parsley and lime or lemon juice if using. Serve it with fresh chopped peppers, chilies or sliced avocado.
