This is a simple, 3-ingredient recipe but I like to experiment with it once in a while. So, I add a layer of homemade apricot jam or cherry jam on the bottom and fresh fruits and nuts on top of the mousse.

To make this chocolate mousse is so easy. Add the aquafaba in a big bowl with lemon juice. Whip them using an electric egg whisk or a hand whisk. I used a hand whisk and the result is amazing but using an electric whisk is even better and faster.

Meanwhile, melt the chocolate using the double boiler method or the microwave. Wait for the chocolate to cool down so it isn’t warm to the touch or else chocolate may seize and you will end up with grainy mousse.
Gradually fold melted chocolate into whipped aquafaba using a silicone spatula in a gentle folding motion. It is normal that the fluffy mixture will deflate a little. Pour the mixture into small containers and place them in the fridge. Is best if you refrigerate them overnight and serve them the other day, but if you are not patient like me, wait at least 3 hours before serving.

Ingredients
- 1 cup /240 ml aquafaba (from a tin of low-sodium chickpeas
- 1 tbsp. lemon juice
- 100 gr dark chocolate
- 1 tbsp caster sugar (optional) *
Preparation
- Melt the chocolate by using the double boiler method or in the microwave. Let it cool down so it isn’t warm to the touch.
- Drain the water from a chickpea can in a glass bowl. Add lemon juice. Whip them using an electric egg whisk or a hand whisk. I used a hand whisk and the result is amazing but using an electric whisk is even better and faster. It will take about 10 minutes to whisk.
- Gradually fold melted chocolate into whipped aquafaba using a silicone spatula in a gentle folding motion. It is normal that the fluffy mixture will deflate a little.
- Pour the mixture into small containers and place them in the fridge. Is best if you refrigerate them overnight and serve them the other day, but if you are not patient like me, wait at least 3 hours before serving.
- If you are using fruit jam, add 1 tbsp of jam to each container and then add the chocolate mixture.
Notes
- Aquafaba should be room temperature so it doesn’t make the chocolate seize when folded.
- Chocolate should be not warm to touch after melted. Wait 5-10 minutes to cool down.
- If you are using sugar add the sugar to the whipped aquafaba before adding the melted chocolate.
