Banana bread is not only a healthy, delicious way to start your day but also the best snack topped with some peanut butter. This Saturday we were craving something sweet, chocolaty and warm so I thought why not make a delicious banana bread and drink it with ginger spiced hot cocoa?

There are a lots of great recipes of banana bread made vegan. Everyone has his own way of making it. Mine has lots of spices but also lots of chocolate, that makes this bread soft and gooey that it will melt in your mouth. You can also add extra nuts and seeds if you want a more protein rich banana bread.

Banana bread is easy to make and the best idea for breakfast if you are meal prepping. Just cut the bread in equal portions and store it in a glass container with lid in the fridge. It will last 5-6 days.

When you are ready to eat it, you can eat it cold or heat it in the microwave. It’s delicious combined with almond or peanut butter and lots of fruit. So when you are meal prepping, be sure to have nut butter and fruits in your pantry!

How to make Banana Bread with Chocolate Chips?

  1. In a big bowl combine all the dry ingredients like all purpose flour, sugar, cinnamon, nutmeg, ground ginger, salt, baking soda, and rolled oats. Give it a stir.

2. Then in a blender, blend together the ripe bananas, olive oil and almond milk. Pour wet over dry ingredients and give it a good stir so everything is mixed. The batter will be thick, like a smoothie consistency.

3. Lightly oil a 23 cm (9-inch) loaf pan and pour the batter into the pan. Add nuts or seeds over the top of the batter so when the bread is baking they become crunchy. Place it in the oven for about 40-50 minutes or until a a toothpick inserted into the center comes out clean.

4. After the banana bread is baked, remove from the oven and let it cool for about 15 minutes. It is delicious served warm with peanut butter or jam.

Tips:

  • Use very ripe bananas so they are sweeter than fresh bananas. This way you don’t have to use a lot of sugar.
  • Add extra nuts and seeds if you want to meal prep this bread. They give the banana bread extra fibers and taste.
  • Use olive oil instead of corn or vegetable oil if you want it healthier.
  • Let it bake completely until a toothpick inserted into the center comes out clean.

Ingredients

  • 1+1/2 cup all purpose flour
  • 3/4 cup rolled oats
  • 1/2 cup sugar
  • 1 tbsp cinnamon
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • pinch of salt
  • chia “egg” (1 tbsp chia seeds with 3 tbsp water)
  • 3 ripe banana
  • 1/2 cup almond milk
  • 3 tbsp olive oil
  • 1/2 cup chocolate chips or chocolate chunks

Preparation

  1. Preheat the oven to 180 degrees Celsius (350° F).
  2. Lightly oil a 23 cm (9-inch) loaf pan. Set aside

  6. Pour the batter into the pan. Add nuts or seeds over the top of the batter so when the bread is baking they become crunchy. Place it in the oven for about 40-50 minutes or until a a toothpick inserted into the center comes out clean.
