Easy Parsley Pesto [vegan]

When I have to come up with something quick and easy, I always choose parsley. Parsley is one of those herbs that I always have on my pantry. This pesto is so easy and tasty! The garlicky taste of it makes you want to eat it all.

I use this parsley pesto when I serve vinaigrette roasted vegetables, in pasta recipes, in bruschetta or to garnish budha bowls. You can use this in pizzas or sandwiches as well. Pesto is something you can eat with everything you love.

Usually I make pesto in a food processor or in a blender but I’ve heard so much about using mortar and pestle. It is fine if you don’t have a mortar and pestle, you can also make this in a food processor, but trust me I was amused when I made this pesto for the first time in mortar and pestle. It gives it another extra flavor when you crush the ingredients together they perfectly combine into each other.

The secret of a great pesto is to use fresh ingredients.

How to make easy parsley pesto?

If you are using mortar and pestle

First add the fresh parsley to mortar and pestle and start to grind. Then add the garlic, salt and pepper and grind again until a paste is formed.

Then add the olive oil, a squeeze of lemon juice and the nuts you are using. I am using hemp seeds because they are nutty and soft when crushed.

If you want to thin it, add a little water to the pesto.

If you are using food proccesor

If using a food processor, simply add the ingredients and pulse until the pesto has reached your desired consistency. I recommend adding water if you are making it this way.

Traditionally pesto is made of fresh basil leaves, garlic, pine nuts,salt, pepper and cheese. I used hemp seeds to substitute the pine nuts. Everything else is similar to the traditional way of making pesto. You can adjust the recipe however you like. I chose not to use vegan cheese because the pesto was super delicious already. You can use the leafy greens you have on hands or other nuts instead of hemp seeds. I would recommend sunflower seeds, pine nuts, walnuts or hemp seeds. Traditionally pesto is made with mortar and pestle but you can use food processor or a nutri bullet as well.
