These waffles may be one of the healthiest waffle recipe I have ever made besides Spinach waffle. They are easy to make and rich in chocolate flavor. We made this the other day and my family loved them.
These Chocolate waffles have a secret ingredient that you won’t even tell. They are made with cooked beetroot. This is a great way to incorporate veggies in your sweet breakfast. My family was a little insecure about the beetroot but when they ate them, they almost forgot that the waffles had beetroot in them.
We topped ours with vanilla plant yogurt, fresh strawberries and date syrup. You can also add nuts, peanut butter, cherry or strawberry jam or chocolate chips. It is best to serve them warm while they are crispy.
How to make Chocolate Vegan Waffle with Beetroot ?
These waffles are made with simple ingredients that you possibly have at home, like:
- Rolled Oats
- Cooked beetroot
- Cocoa powder
- Plant milk
- Brown/Coconut sugar
- Baking soda
- Apple cider vinegar
- Vanilla powder
- Vegetable oil (optional)
You just have to combine all the ingredients in a blender and when the batter is mixed, pour the batter in the waffle pan and they are ready! They are perfect to freeze for meal prep. If you decide to freeze, before eating them, heat the waffles in a toaster and enjoy!
This batch makes about 8 waffles. They are vegan and gluten free. I used rolled oats to make them gluten free. They are also rich in fibers and proteins. You can also use flours of your choice, but it is important to adjust the recipe so the batter remains a bit dry so it doesn’t stick in the waffle pan. I do not use oil in my waffle pan, but you can make them your own way.

Yield : 6-8 waffles
- 1+1/2 cup rolled oats
- 1 cooked beetroot (chopped)
- 1/3 cup cocoa powder
- 2/3 cup plant milk (I used soy)
- 1/4 cup brown or coconut sugar
- pinch of salt
- 1 tsp baking soda
- 1 tbsp apple cider vinegar
- sprinkle of vanilla powder
- 1 tbsp vegetable oil ( optional )
- Pre-heat the waffle iron.
- Place all the ingredients in a blender and blend until the mixture comes together as a thick batter.
- Spoon equal amounts of the mixture into the heated waffle iron. Close the iron and cook for around 5-7 minutes until the waffles are cooked and can be removed easily from the waffle iron. Once cooked, remove the waffles and repeat until all the mixture is finished.
- Enjoy with toppings of your choice.
