I am a big fan of savory breakfast! So when I am cooking on a Saturday or Sunday morning, I try new recipes for me and my boyfriend every time I can. This weekend I tried spinach waffles. I love to add vegetables on everything so I thought why not adding spinach to our savory waffles.

These spinach waffles are so easy to make. You just have to combine all the ingredients in a blender and when the batter is mixed, pour the batter in the waffle pan and they are ready! You can top them with roasted vegetables, charred cherry tomatoes, vegan cream cheese, plant yogurt, tahini sauce, caramelized mushrooms or any topping of your choice. They are perfect to freeze for meal prep. If you decide to freeze, before eating them, heat the waffles in a toaster and enjoy!
This batch makes about 8 waffles. They are vegan and gluten free. I used rolled oats and corn flour to make them gluten free. They are also rich in fibers and proteins. You can also use flours of your choice, but it is important to adjust the recipe so the batter remains a bit dry so it doesn’t stick in the waffle pan. I do not use oil in my waffle pan, but you can make them your own way.

Yield : 8 waffles
Ingredients
- 1+1/2 cup rolled oats
- 1/2 cup cornflour
- 3/4 cup water
- 2 cups spinach
- 1 tbsp apple cider vinegar
- 1 tsp baking soda
- 1 tbsp olive oil
- Salt and pepper
- 1 tsp garlic powder
- 1 tbsp chia seeds
Preparation
- Pre-heat the waffle iron.
- Place all the ingredients in a blender and blend until the mixture comes together as a thick batter.
- Spoon equal amounts of the mixture into the heated waffle iron. Close the iron and cook for around 5-7 minutes until the waffles are cooked and can be removed easily from the waffle iron. Once cooked, remove the waffles and repeat until all the mixture is finished.
- Enjoy with toppings of your choice.
